8 Minute Meals: Gazpacho

Lisa Rolleri, The Domestic Diva, makes a classic Spanish Cuisine that will cool you down this summer: Gazpacho.

Ingredients:

1 28 ounce Can San Marzano Tomatoes

3 Plum Tomatoes chopped

1 English Cucumber, washed and cubed

2 Red Bell Peppers, cored and seeded

1 Red Onion, chopped

3 Cloves Garlic, minced

¼ Red Wine Vinegar

¼ Cup Extra Virgen Olive Oil

½ Teaspoon Sea Salt

½ Teaspoon Fresh Ground Pepper
 

Directions:

In a food processor, coarsely chop onion, garlic, peppers, cucumber and peppers. Place in a large bowl.

Chop tomatoes in the food processor until blended but not pureed. Add to the bowl.

Add the vinegar, oil, salt and pepper. Mix well and refrigerate until fully chilled.

Serve with Lime Sour Cream.

Lime Sour Cream

1 8 ounce container Sour Cream

1 Lime, fully zested.

Combine in a small bowl and serve a dollop on top of the soup.
