8 Minute Meals: plum, blue cheese and arugula flatbread

Personal Chef Keith Urbowicz makes a flavorful and bright flatbread perfect for spring.

Plum, Blue Cheese, Arugula, & Balsamic flatbread

Ingredients:

2 plums

4 oz blue cheese

1 cup chopped arugula

24 two inch pieces of flatbread

Balsamic reduction (store bought is fine. To make, reduce any amount of balsamic vinegar by half)

olive oil

Directions: 

Sear bottoms of flatbread pieces in pan w/ oil to crisp up (lay out in rows)

slice plums into 1/4 inch pieces

lay 1 slice of plum along flatbread

sprinkle blue cheese on top

drizzle balsamic reduction

top with chopped arugula
