8 Minute Meals: traditional latkes

Chef Dave Foster makes traditional latkes that anyone can enjoy.


4 cups shredded russet potato

2 cups grated onion

1/2 cup all-purpose flour

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

2 large egg

2 cups vegetable oil

1 cup applesauce

1 cup sour cream


Grate potato and onion into larger bowl then add flour, salt, pepper and eggs, toss well.

Heat a large skillet over medium-high heat. Add 1/4 cup oil to pan, and swirl to coat.

Spoon a small amount of potato mixture into the pan strategically so you can fit a whole bunch more. Flatten slightly.

Repeat procedure until you have filled the pan.

Sauté until golden brown, maybe 4 to 5 minutes.

Gently flip them over and cook.

Remove latkes from pan, and keep warm. Serve applesauce or sour cream with latkes
