April Godfrey makes pumpkin muffins in the kitchen

Holistic health coach and blogger April Godfrey makes pumpkin muffins for either a snack or breakfast to-go.

Ingredients:

1 1/2 cup flour
3 Tbsp flax seed with 6 Tbsp water
3/4 cup coconut milk
1/2 cup sugar
1/3 cup maple syrup
1 cup pumpkin purée 
1 tsp baking soda
1/2 tsp baking powder
I Tbsp fresh lime juice
1/3 cup almond milk
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves 
1/2 tsp salt
1/4 cup melted coconut oil 

Directions:

– Pre-heat oven to 350 degrees.
– Lightly grease mini muffin tins.
– Mix flax seed with water and let to sit.
– Mix all other ingredients together.
– Add ground flax seed mixture and mix very well.
– Bake at 350 degrees 25-30 mins
15-17 minutes for mini muffins
