Holistic health coach April Godfrey makes a protein-packed snack pefect for on-the-go: cookie dough freezer bites.

Ingredients:

1 1/2 cup gluten free rolled oats

1/4 cup ground almond meal

2 Tbsp chia seeds

2 Tbsp ground flax seed

1/4 tsp sea salt

2 tsp vanilla extract

3 Tbsp peanut butter

1 Tbsp brown rice syrup

1/4 cup pure maple syrup

1 Tbsp water

2 Tbsp mini chocolate chips

Directions: 

~Blend oats to a fine powder in the food processor.

~Add all other ingredients except the mini chips and blend until well combined and all sticking together.

~ Mix in mini chips.

~Roll into little balls, pop into the freezer, grab and go this blast of plant based protein anytime you need a sweet pick me up!
