Viewer Cookbook: Healthy Shrimp Scampi with Zucchini Noodles

Today’s Viewer Cookbook selection comes from Donna Miller in Dayville! Her shrimp scampi recipe has a healthy twist; zucchini noodles instead of pasta. It’s a great way to get those veggies in (and it’s keto-friendly!) PLUS the whole recipe can be made in one pan! 

Ingredients

1 shallot, finely chopped

2 zucchinis, spiralized

1 tsp red pepper flakes

zest of half a lemon

juice of half a lemon 

2 tbsp minced garlic 

1/4 cup low sodium chicken broth 

1 bag riced cauliflower 

1.5 lbs of shrimp

Directions:

Saute 1 shallot in one tablespoon of butter and little bit of olive oil. Spiral 2 zucchinis. Add to the pan with a teaspoon of red pepper flakes, zest of a half of lemon, juice of half a lemon, 2 tablespoons of minced garlic, a 4th of a cup of low sodium chicken broth, riced cauliflower with garlic and lemon, a pound and a half of shrimp. Salt and pepper to taste. Saute to slightly soft.
