Mushroom Dumplings for the Greenwich Wine and Food Festival

(WTNH)- The 2018 Greenwich Wine & Food Festival is returning for its eighth year Friday September 21st and Saturday September 22nd. The festival happening at Roger Sherman Baldwin Park in Greenwich.

The festival's main beneficiary this year is the Multiple Myeloma Research Foundation which is a charity directed to finding a cure for multiple myeloma, an incurable blood cancer.


Chef Brian Reilly from Mecha Noodle Bar, came to Good Morning Connecticut to preview a dish that will be seen there. Reilly put together Mushroom Dumplings.


The recipe is as follows:

Mushroom filling

 Description

2 lbs Button mushrooms

2 T Olive oil

½ Lg white onion

2 clove garlic

3 T butter

½ c Parmesan cheese grated 

Prep

  1. In large pot heat olive oil over medium heat
  2. Wash and dry mushrooms and place in pot with about 1 T salt
  3. Chop onions and garlic small and combine in pot with mushrooms
  4. Continue cooking and stirring until mushrooms have cooked out all moisture
  5. Turn heat to low and fold in parmesan and butter
  6. Allow mix to cool to room temp and puree in food processor

Miso Dressing

 Description

½ onion

2 cloves garlic

1 c White miso

2 T mirin

2 T soy

1 T rice vinegar

1 t brown sugar

Prep

  1. Combine all ingredients in blender and puree till smooth
