Spiced swordfish rub by chef Shaun Golan


Chef and co-owner of The Mariner Shaun Golan makes a rub for spiced swordfish.

Yields 2 Cups

3T black peppercorns

2T cumin seeds

1T fennel Seeds

Toast together in large skillet over medium heat until fragrant. Add to blender, and pulse until broken into corse pieces.

Add to mixing bowl, then add:

1T dried Thyme

3T smoked Paprika

2T cayenne pepper

3T light brown sugar

2T Kosher Salt

Mix all ingredients well, store in airtight container. Will Keep for up to one Month.
