In The Kitchen: Chef Raquel Rivera-Pablo shows us how to make homemade pasta dough

You won’t believe how easy it is to make this homemade pasta recipe. Owner of A Pinch of Salt and Chef Raquel Rivera-Pablo has step by step instructions.

Ingredients:

2 cups of all-purpose flour

3 large eggs

1 teaspoon of salt, optional

1 tablespoon of extra-virgin olive oil, plus a drizzle

Directions:

1. In a large bowl combine flour and salt. Make a well in the middle and add eggs and olive oil. lightly beat with a fork. Gradually draw in the flour from the inside wall of the well in a circular motion. Continue to incorporate all the flour until it forms a ball.

2. Sprinkle flour on work surface, and knead the dough until it becomes elastic and smooth 8-10 minutes. Brush the surface with the remaining olive oil and wrap the dough in plastic wrap. Let rest for about 30 minutes.

3. Cut the ball of dough in ½ . Cover the other half so it doesn’t dry out. Dust counter and dough with a little flour. Press the dough into a rectangle and roll it through a pasta machine as follows: 3 times through the widest setting, folding it into a letter design each time. And then once each time using the odd numbers of the machine. If dough is cracking add a light dusting of flour to dough/machine before passing through. Dough should be paper-thin, about 1/8-inch thick (should be able to see your hand through it.).

4. Lightly dust the sheets of pasta dough with flour as needed and shape into desired pasta.
